Savory Bread Pudding

When E and I first met, he was not much of a breakfast person, nor a morning person for that matter. I knew such people existed, but dating one was shocking! Thankfully, after years of brainwashing and shock therapy, I got E to have breakfast with me. He is still not much of a morning person (E trumps Grumpy Smurf any day), but at least he has breakfast now every morning. He is a Quaker Cruesli Chocolate kind of guy, much to my annoyance. I always tell him that Quaker Cruesli Chocolate is nothing but buckloads of sugar in disguise, but he simply shrugs and pours on fat-free yoghurt, as if that makes it alright. I've tried feeding him all kinds of foods for breakfast, but they didn't stick. So when I threw together a savory bread pudding the other day, I was taken by surprise at his enthusiasm for this healthy (breakfast) dish. He ate it two mornings in a row :-O And no sugar involved!

Savory Bread Pudding (serves 6)

Ingredients


  • 6 slices of 100% whole grain rye sourdough bread
  • 5 egg whites
  • 2 whole eggs
  • 200 g (1 cup) of low-fat cottage cheese
  • 100 g of grated skim cheese (such as grated mozzarella)
  • 150 mL skim milk
  • ~6 tbsp pumpkin puree
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried chives
  • 1 tsp dried oregano
  • pepper to taste



Method


  1. Lightly grease an oven dish that fits 3 slices of bread in such a way that most of the bottom is covered.
  2. Cover the bottom with 3 slices of bread.
  3. Combine the remainder of the ingredients - except for the remaining bread and the grated cheese - together in a bowl and mix well using a mixer.
  4. Pour half of this mixture over the bread in the oven dish.
  5. Sprinkle half of the grated cheese on top of this layer.
  6. Layer with the remaining 3 slices of bread.
  7. Pour the rest of the wet mixture on top and finish off with the last of the grated cheese.

  8. Cover the dish and place in the refrigerator overnight or for at least four hours.
  9. Bake in the oven until set.
