Saved By The Bell

It happens to the best of us: the cooking and blogging blues. Plenty of recipe ideas but little gusto to actually do something with them. Instead I find myself watching others sweat in the kitchens of MasterChef and Ready Steady Cook (my favorite cook is Gino, he is so funny).

Then dinner time comes and you know you have to eat, but what? You don't want to spend a lot of time on it, but you do want something healthy and tasty... red bell pepper saves the day! Stuff it with a mixture of cooked (red) quinoa (45 grams uncooked; cooked according to package instructions), 1-2 tbsp leftover cranberry sauce, and 1-2 tbsp of pomegranate arils. Pop it into the oven for about 30 minutes, together with some slabs of tofu slathered in BBQ sauce. And voila, you've got a typical case of saved by the bell ^^
