Lately I've been making everything into chips/fries using my oven: sweet potato, parsnip (pastinaak in Dutch), and as of yesterday, celeriac (knolselderij in Dutch).

The method is always the same, peel, dice, toss with 1-2 tbsp olive oil, and spread the chips over a baking sheet lined with baking paper. Leave plenty of space between the chips and cook/roast in the oven for anywhere between 30 and 45 minutes. After roasting, I like to toss my chips with some sea salt, rosemary, and thyme.

Yesterday was my first time making celeriac chips and I was inspired by this recipe. As I was already using the oven for making chips, I decided to roast some kohlrabi as well, hence the greenish color in the mix below!
