The E from Easy Homemade Peanut Butter!

OH-MY-DEAR-GODS!!! Did I just trap heaven in a mason jar! Mmm mmm mmm...

The other day E finished off my homemade nut butter.
In fact, he had his first taste of it and he declared it was much tastier than his favorite store-bought peanut butter. Clearly this was a sign. A sign to go forth and concoct a peanut butter that would knock him off his socks and have him eat homemade peanut butter until the end of time.
And so I did, and I'm annoyed that I have to share it with him now, because it's MINE MINE MINE. My own, my love, my PRECIOUS!
In honor of E, I present you the E.

The E
Ingredients


  • 250 grams (2 cups) store-bought unsalted peanuts
  • 1 tbsp blackstrap molasses
  • 1 tsp pure vanilla extract
  • 1/2 tsp speculaas spices
  • 1.5 tbsp ground flax seed, lightly toasted in a pan
  • 1 tsp palm sugar
  • 1.5 tbsp pumpkin seed oil
  • 1 square of dark chocolate (70% or more)
  • a few sprinkles of himalaya salt



Method


  1. Toss the peanuts together with the molasses and spread out on a wax paper lined baking sheet.
  2. Bake in the oven until the molasses starts to caramelize ( ~ 15 minutes).
  3. Let the peanuts cool down, you will get peanut brittle. Resist the temptation to chow it down ;-)

  4. Process the peanuts in a food processor, scraping down a few times.
  5. Add the remaining ingredients and blend.
    Just look at that yumminess! The sun even came out to kiss it ^^



The result is a perfectly drippy, incredibly tasty peanut butter. Hide it and don't tell ;-)
