The Cat And The Pie

This is my breakfast staple. A little like oatmeal and a little like apple pie, but then the best of both! My winter season special includes Apple Cottage Breakfast Pie topped with homemade pumpkin butter, homemade nut butter, and kruidnoten. Easy to make, versatile, nutritious, and most importantly, very yummy!

Apple Cottage Breakfast Pie (serves 4)
Ingredients


  • 120 grams rolled oats (or musli mix)
  • 200 grams low-fat cottage cheese
  • 2 whole eggs + 3 egg whites
  • an apple, cubed



Method
Mix all ingredients together in a bowl until evenly mixed. Pour into a greased (round) baking dish and bake until firm (30-45 minutes).

Let cool down completely before cutting into 4 pie pieces.



I usually make this in the evening and store it in the fridge until the next morning. Then I can turn it upside down and slice it nicely. Microwave on high for a few minutes if you like a warm pie and store in the fridge for up to 5 days. Play around with the ingredients, add a variety of chopped (dried) fruit, nuts, spices, etc.

WARNING: Don't leave pie unattended on your window sill!
