Loaded Apple Pie

Yesterday evening E and I picked all the apples from our tree.

It didn't seem like a lot, but it ended up being a good 8 kilos worth of apples. With the occasional spider in between...

Afterwards we seated ourselves at a table in the sun and enjoyed a lovely BBQ buffet catered by the Olmenhorst kitchen. They served up a simple but delicious spread of organic meats, salmon and fresh salads at the cost of only 12.50 Euros per person!

Today I set about making a loaded apple pie... two actually. Because two is always better than one ;-)
I started out with this recipe, but after our apples turned to a caramelized mush in the oven, I sort of winged it. I doubled the crust recipe and used a mix of whole grain rye flour, oat flour, and all-purpose flour for the crust, and used 3/4 cup of apple pie liquor instead of the rum. I left out the sugar in the crust since I figured the apple pie liquor would already provide some sweetness. The filling ended up being 26 apples (13 per pie) worth of lovely roasted caramelized cinnamon-spiced mushy apple, which I topped with vanilla-, cinnamon-, and cardamom-infused and lightly sweetened brown butter. I also secretly added in some chopped homemade crystallized ginger. The result?!

Best apple pie EVER!!! It's all about the butter. And of course apples, lots of apples!
