Taste of Summer

Limes, corn, zucchini, cherries, strawberries... summer has announced itself on the market and in the produce section of the supermarket. Summer has also made its presence clear in the form of sunshine and sky-high temperatures (at least for Dutch standards). I'm loving every bit of it. I find myself outdoors, walking, running, biking, soaking up as much summer as I can. And if I can support the Dutch world cup time while doing so, well, that's just a win-win ;-)

Food-wise I've fallen back on grilled veg (zucchini, eggplant, bell pepper, corn), crudités & fresh dips, and salads. Meals are quick & easy, so I can spend more time outdoors. At the moment I find myself obsessed with fava bean spread. I love fresh fava beans!

Removing them from their pods doesn't take as much time as you'd think and I find popping them from their pods to be quite a therapeutic activity. After de-podding, boil them in water for 5-7 minutes, drain, and place in a bowl of (ice) cold water to stop the cooking process. Then pinch each bean at the end and give it a squeeze to pop it out of its skin. Of course you don't need to remove the skin, but it greatly enhances the texture of your dip. No to mention the bright green color...

Blend the beans in a food processor with fresh lime juice, Greek yogurt (0% fat or full-fat), cumin, sumac powder, zaatar mix, feta cheese and freshly ground black pepper. Adjust to taste. Lastly, add fresh herbs to your dip and pulse in your food processor to incorporate. I like to use a combination of cilantro and parsley, but some fresh mint works miracles too.
