White Chocolate Wonderful Matcha Protein Bars

I've never actually tried White Chocolate Wonderful from Peanut Butter&Co. but a few weeks ago I made two jars of it. It's not a very complicated recipe, I mean, it's peanuts blended with white chocolate... I used a weight ratio of peanuts to white chocolate of 2:1. So for every 200 grams of roasted peanuts, use 100 g of good quality white chocolate (white chocolate callets from Callebaut for example). Add salt and vanilla extract/powder to taste, blend on high in your VitaMix or any other high power food processor/blender and voilĂ !
It was a bit too easy to make and it was way too tempting to keep it in sight. So in an attempt to save myself from yet another PB OD, I made some wonderful protein bars with it. This way I can have my white chocolate wonderful and eat it too ;-)

White Chocolate Wonderful Matcha Protein Bars (makes 16)

Ingredients


  • 150 g (5.3 oz) of White Chocolate Wonderful (homemade or store-bought)
  • 120 mL (1/2 c) unsweetened rice&coconut milk (or any other equivalent of liquid)
  • 8 g (1 tbsp) unsweetened matcha green tea powder
  • 6 g (about 1 tbsp, depending on the brand) coconut flour
  • 45 g (1/2 c) 100% all natural unflavored whey protein powder
  • 53 g (1/2 c) casein protein powder (vanilla or cookies&cream flavor)
  • 21 g whole hemp seeds (which were sitting in my pantry looking all sad and forgotten)
  • 50 g (1 c) Kashi Go Lean Cereal (you can sub with puffed rice/buckwheat/kamut or crush up some rice cakes instead)



Instructions


  1. In the bowl of your stand mixer/food processor, mix the peanut butter and rice&coconut milk until smooth.
  2. With the mixer running, slowly add the protein powders, matcha, and coconut flour, until incorporated.
  3. Add the hemp seeds and lastly, add the cereal.
  4. Spread mixture out in a square baking pan lined with baking paper. I use this inexpensive fondant smoother to make sure it is pressed down equally and smooth:
  5. Place tray in the fridge to chill for 1-2 hours, then cut into squares and wrap individually in plastic wrap for easy packing&snacking.
