Lick My Cookie

Yep, that came out totally wrong... but I meant it quite literally!
I made this amazing white chocolate chunk macademia nut cookie butter, which you're going to be licking straight off your knife. Then you'll ditch the knife and take a spoon to the jar. You are going to unleash your inner cookie monster on that jar. That's how ridiculously addictive this stuff is!
And it's so easy to make, you'll kind of wish it wasn't ;-)
For me it all started with finding half finished bags of macadamias (bought at the Byron Bay farmer's market!), cashews (bought in Brazil at the world's largest cashew tree), and Callebaut's white chocolate callets (bought at a chocolate making workshop) in my pantry. It was simply destiny.

White Chocolate Chunk Macadamia Nut Cookie Butter (makes 2 jars)

Ingredients


  • 250 g raw unsalted macadamias
  • 200 g raw unsalted cashews
  • 1 tbsp maple syrup
  • 200 g white chocolate (28% cocoa solids) callets (chips) from Callebaut (or any other high quality white chocolate)
  • 1 tsp ground vanilla bean powder
  • 1/4 tsp Hawaiian black salt



Method


  1. Mix the nuts and maple syrup together until covered in the syrup.
  2. Spread out on a baking tray lined with baking paper and roast in a preheated oven (180C fan-assisted) for 10-15 minutes (until the nuts start to brown and smell fragrant).
  3. Remove nuts from the oven and let them cool down a bit.
  4. Process nuts together with the remaining ingredients in a food processor equipped with an S-blade until smooth.
    If you have a VitaMix, I highly recommend processing everything together to a paste in your regular food processor, and then transferring it to the VitaMix for extra processing. The result will be even silkier and smoother <3
