Hemp Brownies

We've all been there: you get sucked into a hype and buy something you wouldn't otherwise. Then, a year later, said item is still sitting untouched in your pantry. I know, most people have this issue with clothing or shoes, but it happens to me with food items. Albeit rarely! You see, sometimes you just don't know what to do with a certain ingredient. That was kind of the case for the packet of hemp protein powder that was hiding in my pantry.
I'm not a vegan, I don't have any food allergies, so I didn't have any reason for buying the hemp protein powder other than my insatiable curiosity. Then I tried some in a smoothie, found it rather bleh, and forgot about it for a year. But being Dutch = being frugal, and as such I couldn't let it go to waste.
After googling for inspiration I settled on making hemp brownies. It seemed fitting, being Dutch and all ;-)
I followed this recipe from Purely Twins with the following modifications:
* used 4.6 oz hemp protein powder (otherwise I'd still have 0.6 oz left and no use for it)
* used 4 oz of 3% fromage frais instead of apple sauce (I'm probably the only Dutch person that doesn't have apple sauce in their pantry)
* emptied my bottle of liquid stevia instead of using coconut nectar (it was about 1-1.5 tsp)
* used 1 egg
* left out the peppermint extract
* used 2 tsp guar gum and 1 tsp xanthan gum instead of tapioca flour

The batter tasted gritty and unpleasant, but thankfully the baked product tasted remarkably like brownies and even looked the part too.

A bit on the fudgy side, probably because I omitted the tapioca flour, but good nevertheless. It made 16 brownie squares and the nutritional stats per square aren't bad for a 'brownie':

However, I don't think I'll be buying any hemp protein powder again any time soon.
