My #1 Sauce

If you'd ask me what my favorite nut/seed butter is I'd have a hard time deciding. But ask me what my favorite sauce is and without a doubt I'd answer: chimichurri.

It's originally from Argentina, but I first had it in Ecuador. It combines my favorite pure and fresh ingredients: coriander/cilantro, limes, red chili peppers, garlic, and tomatoes.

There are many versions. Some use parsley/perejil instead of cilantro, or a combination of both. Chopped onion can be added. Red or white vinegar can be used, and tomatoes are optional. You don't need fancy equipment, a stick blender with chopper attachment will do just fine:

Chimichurri Sauce

Ingredients


  • 1 bunch of coriander/cilantro, only leaves
  • juice of 1 lime
  • 1 head of garlic, cloves minced (I use a garlic press)
  • 2 red chili peppers, chopped roughly
  • 120 mL (1/2 c) extra virgin olive oil
  • 60 mL (1/4 c) red balsamic vinegar
  • 1 tsp dried oregano
  • 1 tomato, roughly chopped



Method


    If using a food processor, pulse the lime juice, minced garlic, and chopped red pepper together until chunky but uniform. (I added in the flesh of the lime because I love the lemony flavor it gives:)

    Then add the tomato, olive oil, and vinegar and pulse until combined. Lastly, add the coriander and dried oregano and pulse until coriander is chopped (not too finely). Transferred to a glass jar this sauce keeps well over one week.
