White Easter

Some people dream of a white Christmas. I have nightmares about a white Easter! And it seems my nightmares might just be coming true... it actually started snowing again :-O
If you can't beat winter, embrace it. So I pulled out my Christmas mug and served up some spicy Thai pumpkin soup.

I've had my share of pumpkin soup all over Australia. Seriously, it was like on every menu! Some were good (no cream, lots of pumpkin and flavor), some were awful (way too much cream and not nearly enough pumpkin), and then there was the best I have ever had: Thai Red Curry Lentil Soup.

It was on the menu of 12 Rocks Cafe & Beach Bar in Port Campbell. It was spicy and generous in portion size. It was love at first bite <3
So in an attempt to recreate a bit of that lovely lunch with ocean view, I looked up recipes that came near to it. There are tons of good Thai pumpkin soup recipes on the web:



I let myself be inspired. Then I threw together a very basic Thai pumpkin soup by blending and then gently heating 400 g/14 oz cooked pumpkin, 480 mL/2 c onion broth, 400 mL/14 fl. oz can of light coconut milk, and a whopping 3 tbsp of Thai red curry paste. Yep, 3 tablespoons! What can I say, I like my soup spicy?! It's not quite as good as the Aussie version, but close enough ^^

It makes about 5 generous bowls of soup for just a little over 100 calories. Snow or sunshine, I'm good ;-)
