The biscuits of Oz

Australia, or Aus(sie), is often referred to as Oz. When I first saw vans and flyers with 'Oz experience' and 'Oz tours' plastered across them, my first thoughts were of the 'The Wizard of Oz' ^^
The movie 'Oz - The Great and Powerful' is due in cinemas here the day before my birthday (14th of March) and I'm hoping it will be amazing, but nothing can ever diminish the greatness of the classic 1939 version. I don't recall at what age I saw it (I'm sure my mom knows), but it was at the age where I totally believed in magical worlds. Not that I ever stopped believing ;-) Or wanting red glitter shoes...
Tin man and cowardly lions aside, this post has nothing to do with the story.
Down under, in the land of Oz, they eat these wonderfully chewy oat biscuits. They're called Anzac biscuits, and basically they're a mix of rolled oats, flour, desiccated coconut, sugar, butter and golden syrup. I wouldn't be me if I didn't attempt to healthify this lovely treat. Thankfully, Teresa Cutter over at the Healthy Chef did all the work for me! I followed her recipe making the following modifications:


  • added 35 g (1 heaping scoop or 5 tbsp) 100% whey isolate (unflavored) to amp up the protein content
  • added 2 egg whites, for the same reason as above
  • used 42 g (about 5 tbsp) super light margarine (instead of oil)
  • 30 g (heaping 1/4 cup) almond meal instead of flaked/chopped almonds



Also, instead of 20 cookies, I made 14. 'Cause I like my cookies big ^^ They came out crazy good and with nice nutritional stats to boot (based on 14 cookies):

They're perfect for long sweaty hikes in the outback <3
