Brownie BETTER Pancakes

First there were Red Velvet Power Pancakes. Now there are Brownie Batter Protein Pancakes. Fudgy and gluten free!

Brownie Batter Protein Pancakes (makes 4 pancakes; serves 1)

Nutritional info per serving (4 pancakes):


  • 15 g (1/2 scoop) whey protein powder (vanilla flavor)
  • 10 g (1.5 tbsp) Fibrex (or sub with psyllium husk fibre)
  • 1 tbsp whole grain yellow corn flour
  • 1/4 tsp baking powder
  • 3 egg whites
  • 28 g (4 tbsp) carob powder
  • 200 g cooked, peeled beets (about 5 small beets)


  1. Puree all ingredients together in a blender until smooth. Let it stand for 5-10 minutes. The Fibrex (or psyllium husk) will absorb liquid and the batter will get a bit thicker.
  2. Bake batter in a non-stick pan lightly coated with oil. Be careful when flipping the pancakes, because they're very soft and fudgy. I slide mine onto a plate or lid and then gently turn them upside down in a pan.
