The Dutch don't celebrate Thanksgiving, neither do I. But I'll take any excuse for making pie and it just so happened that my parents came over on Thanksgiving for a grocery shopping spree in Germany. I had my mind set on making a pecan pie. Not just any pecan pie, but a paleo pecan pie. After browsing the web for paleo (pecan) pie recipes, I settled on this one. One small problem. I didn't have pecans! So I used walnuts instead. I think I also un-paleod (is that even a word?!) the pie by using super light margarine instead of butter, but hey, it still tasted great ;-) And who can resist a square pie anyway?!

Almost Paleo Walnut Pumpkin Pie (serves 12)

Nutritional data per serving:


  • 97 g (a bit more than .75 c since .75 c = 90 g) coconut flour
  • 47 g (1 c = 50 g) almond flour
  • 1 tbsp speculaas kruiden (or pumpkin pie spice)
  • 1/8 tsp pink salt
  • 3 egg whites
  • 6 tbsp super light margarine
  • 170 g (2 c) walnuts (save some walnut halves for decorating)
  • 1/2 c pumpkin puree
  • 10 dates, pitted
  • 3 tbsp agave syrup
  • 4 egg whites
  • 1/2 tsp maple extract
  • 1 tsp vanilla extract
  • 8 tbsp super light margarine
