Uncle Guido's Cookies

Today my uncle Guido turns 65!!! Before I'm off to visit my uncle for his birthday and hand over the stellar birthday cake that I made him...

Uncle Guido is a funny man. He's also very creative, both on canvas as well as in the kitchen. Below you can see one of his canvas artworks.

Every time my birthday came around, he would ask me what was on my gift wishlist. For many years I told him the same: bake me those cookies that you make every Christmas, you know, those jam-filled ones!
And so for many years I'd receive a package. Sometimes handed to me in person by him, sometimes via mail. Inside were neatly stacked layers of his mouth watering Linzer cookies.
I once asked him if they were difficult to make. He told me no, just time consuming is all. And the key to success: lots of butter and sugar.

But then difficult and sad times came along for my uncle and obviously baking cookies was about the last thing on his mind. It left me with no other choice than to bake them myself!
I could hear his voice hovering over me 'lots of butter and lots of sugar', but I just couldn't do it! Surely I could make a few cuts here and there and still get a tasty result?!
So I decided to follow this recipe from Cooking Light with a few modifications here and there. Instead of using all butter, I decided to do half and half: half organic salted butter and half super light margarine. I usually find recipes to be overly sweet, so I went for 1/2 cup sugar (equivalent) instead of 3/4 cup. I used a combination of 1/4 c organic cane sugar and 5 tsp Stevija baking blend (=equivalent of 1/4 c sugar).
It took a lot of restraint not to eat all the raw cookie dough... OMG it tasted good! I took most of these cookies to work and they were a big hit.

Whatever cookies I had left at home didn't survive the night! But as good as these cookies were, nothing compares to my uncle's cookies ;-)

Lighter Linzer Cookies (makes 30)

Nutritional data per cookie:


    Cookie dough
  • 365 g (2.75 c) organic self-rising flour
  • 50 g (1/4 c) organic cane sugar
  • 5 tsp Stevija baking blend (or any other dry sweetener equivalent to 1/4 c sugar)
  • 60 g (1/4 c) salted organic butter
  • 70 g (1/4 c) super light margarine
  • 1/2 tbsp of pure vanilla extract
  • 1 egg
  • 2 tbsp organic strawberry jam
  • 2 tsp organic powdered sugar
