Newfound respect

Yesterday I ran my toughest 30 minutes. Ever! On this seemingly endless and torturous run, I gained respect for triathletes. You see, I thought it would be a nice experiment to see what it was like running straight after biking 12 K. Yeah, I'm into pain like that. My legs were heavy, tired, and aching with every step. I think I should have fueled properly before my run. I can't imagine having to run, swim, and bike. I don't know how triathletes do it. I've got nothing but respect for them! I was sooo glad when I finally got back home and exchanged my running shoes for these beauties:

I picked these sandals off the shelf because I thought they looked elegant and sporty/rock-chick like at the same time. Then I slipped them on my feet and I couldn't believe how comfy they were. When I found out they were Skecher Tone Ups, I almost didn't buy them. I mean, I don't believe the whole tone up shoe craze. Really, these sandals aren't going to make my butt firmer, my legs slimmer, and my cellulite magically disappear. But they are extremely comfortable to wear. And cute. Well, enough about my sandals. I've got a recipe lined up for y'all: Lentil Meatballs (adapted from Sprouted Kitchen). This recipe makes 24 mini muffin sized 'meatballs'. Nutritional info per serving (=6 mini muffin balls):

Then transfer the lentil puree to a mixing bowl and add 80 g (0.5c) rolled oats. Mix and let mixture sit for 30 minutes. Divide mixture over mini muffin pan and bake in the oven for 15-30 minutes.
I enjoyed mine with some parsnip and carrot latkes on the side <3
