What's Crackin' ?

Posted on 08 Feb 2012 by maisha (posted in: blogs)

Right now, that would be the ice. Cracking, as the temperature rises and the Dutch people's hopes for an Elfstedentocht sink. Yesterday morning on my way to the bus station, the temperature registered -15°C (5 °F)!! OMG. I spontaneously dropped a pant size. Pull out the Christmas decoration:

This morning's -10°C felt like a tropical breeze in comparison.
I've been fueling myself through these crazy cold days with Angela's Endurance Crackers. Find the recipe below in metric units!

They are so crunchy and addictive <3 Although next time I think I'll add a bit more cinnamon!

Angela's Endurance Crackers (makes 20)

Nutritonal value per cracker (based on 20 crackers total):

  • 84 g (1/2 c) raw chia seeds
  • 75 g (1/2 c) raw pumpkin seeds
  • 72 g (1/2 c) raw sunflower seeds
  • 63 g (1/2 c) raw sesame seeds (I used a mix of black and white sesame seeds)
  • 1 tsp cinnamon, optional
  • kelp granules, to taste
  • 240 mL (1 c) water

  1. Mix all ingredients until you have a thick paste.
  2. Spread out thinly onto a baking sheet lined with baking paper (or use a silicone baking sheet), like so:

  3. Bake until dry and firm and let cool down before cutting into desired amount of squares.
  4. Bake for another 20-30 minutes until crisp.
