New Year's Morning Has Broken

New Year's morning has broken and long since gone,
Yet no word from me, might something be wrong?
I assure you all is as well as can be,
The new year has inspired not one, but two recipes!

Deconstructed pumpkin pie: crustless pumpkin pie with carrot cake granola, whipped topping and chocolate sprinkles.

Crustless Pumpkin Pie (serves 6)

Nutritional value per serving (based on 6 servings):


Ingredients


  • 200 g (1 c) non-fat cottage cheese
  • 360 mL (1.5 c) pumpkin puree
  • 60 g palm sugar
  • 200 g (1 package) reduced fat or non-fat cream cheese
  • 4 egg whites
  • 1 whole egg
  • 28 g molasses
  • pumpkin pie or speculaas spice to taste (I use 1/2 tbsp)



Method


  1. Throw everything into a blender or food processor and blend until smooth.
  2. Pour into a lightly greased baking dish (I use a glass lasagna dish) and bake until set (up to 1 hour).


Top with carrot cake granola and diggety-dig in...


Carrot Cake Granola (serves 18)

Nutritional data per serving (based on 18 servings):


Ingredients


    *DRY*
  • 258 g (1.5 c) rolled oats
  • 40 g (~ 1/4 c) raw buckwheat groats
  • 110 g (~ 3/4 c) uncooked amaranth
  • 30 g (1/4 c) peanut flour
  • 40 g (~ 1/4 c) palm sugar
  • 1/2 to 1 tbsp pumpkin pie or speculaas spice
  • 35 g (~ 1/3 c) unsalted walnuts
  • 140 g (~ 1 c) unsalted hazelnuts
    *WET*
  • 300 g finely grated carrot
  • 120 mL (1/2 c) unsweetened apple sauce/juice/water (I use water) or more as needed if mixture is too dry



Method


  1. Mix dry ingredients together in a bowl.
  2. Add wet to dry and mix until evenly mixed.
  3. Spread mixture out on a baking sheet lined with baking paper and bake in the oven until dry, browned and crisp, stirring every 15 minutes or so.
