I'm having a severe case of TGIF! Logged more than 800 km (500 miles) in the fancy company lease car this week. You see, I've been assigned a period of secondment (4 days per week) until the end of October. This means a lot of hours spent driving. And when I get home, all I want to do is crash on the couch. But looking on the bright side, I get an extra daily allowance for my secondment, and maybe, just maybe, I'll be able to afford that pink Kitchen Aid I've had my eyes on for a loooong time...

For now I'm just glad it's Friday and that this weekend I get to hit the gym and make/cook delicious things <3 I'm whipping up a new batch of Cookies & Cream Butter. And with the recipe below, so can you!

If you're riding the pumpkin tide, you can always make a batch of Green Goblin Butter ^^

Cookies & Cream Butter

Nutritional info per serving (~ 2 tbsp):


  • 200 g (7 oz, about 1 1/2 c) cashews, raw and unsalted
  • 1 tbsp molten extra virgin coconut oil (my favorite brand is Amanprana, it's a bit pricey but so worth it imo)
  • 1 tsp pure vanilla extract
  • 1/4 tsp sea salt
  • 30 g (1 oz) good quality white chocolate (such as Green & Black's organic white chocolate), chopped


  • Throw everything into your blender and whiz away until you have creamy deliciousness!
