A New Star

A new star has risen in my kitchen. It belongs to the granola family ;-) Ladies and gents, I present to you Cocoa Crunch Protein Granola!

Isn't she a beauty?! I assure you, she's crunch-crunch-crunchylicous too ^^

Cocoa Crunch Protein Granola (makes 15 servings)
Nutritional value per serving (based on 15 servings):

    the dry
  • 172 g (2 c) old-fashioned oats
  • 32 g (1/2 c) wheat bran
  • 49 g (1/4 c) raw buckwheat groats
  • 49 g (1/4 c) uncooked amaranth
  • 45 g (1/4 c) uncooked quinoa
  • 63 g (2 scoops) Dymatize Nutrition Elite Whey Protein Powder, Berry Blast
  • 130 g (1 c) chopped nuts (I used 1/2 c of unsalted sunflower seeds and 1/2 c of chopped almonds)
    the wet
  • juice of 1 apple (I literally juiced 1 apple in my juicer, I'm sure you could use about 60 mL (1/4 c) of store-bought apple juice instead)
  • 60 mL (1/4 c) water
  • 2 tbsp cocoa powder
  • 1 tbsp molasses
    the extra's
  • 8 dried apricots, chopped
  • 6 medjool dates, pitted and chopped
  • 1/4 c dried golden berries, chopped

  1. Mix the dry together in a bowl.
  2. Place the wet in a small saucepan over low heat and stir until well combined.
  3. Add the wet to the dry and mix until combined.
  4. Spread the granola mixture out on a baking tray lined with baking paper and bake until crunchy (about 45 minutes). Check on it regularly to stir and make sure that nothing burns. Add the extra's when the granola is completely cooled down, or during the last 10 minutes of baking.
