C is for Cookie

Cookie, cookie, cookie! Peanut butter chickpea cookie ^^

Soft, nutty, warm, with a slight hint of spice... mmm <3

Peanut Butter Chickpea Cookies (makes 10 huge cookies or 20 smaller ones)

Nutritional stats per cookie (when making 10): 156 calories, 6.4 g protein, and 3 g fiber. 100% taste.


  • one 350 g (12.3 oz) can chickpeas, drained and rinsed (drained weight=215 g/ 7.6 oz)
  • 128 g (1/2 c) crunchy salted peanut butter
  • 1 whole egg
  • 1 tbsp canola oil
  • 1-2 tsp vanilla extract
  • 2 tsp Sizzle Spice Mix (or use pumpkin pie spice or speculaas kruiden)
  • 34 g (1/4 c) whole wheat flour
  • 64 g (1/2 c) palm sugar (or use sucanat/rapadura/muscovado)
  • 1/2 tsp baking soda


  1. Blend the first 5 ingredients together in a food processor until smooth.
  2. Mix the remaining ingredients together in a mixing bowl.
  3. Add the pureed chickpea mixture to the flour and mix until fully combined.
  4. Drop batter on a baking sheet lined with baking paper and bake until slightly firm and the top starts to crack (about 15 minutes).
  5. Eat one warm ;-)
