Holla For Granola

My Low-Fat Mocha Coconut Granola is based on her Orange Coconut Granola recipe. So let's hear it for my granola ^^

Low-Fat Mocha Coconut Granola

Ingredients


  • 172 g (2 c) rolled oats
  • 32 g (1/2 c) wheat bran
  • ~ 134 g (1 c) chopped nuts (almonds, pistachios, and paranuts)
  • 82 g (1 c) shredded, dried, unsweetened coconut
  • 80 mL (1/3 c) water + 1/2 tsp instant espresso granules
  • 80 g (4 tbsp) honey
  • 1 teaspoon apple pie spice
  • ~ 131 g (1 c) chopped dried fruit (apricots, raisins, cranberries, golden berries)


Method


  1. Combine water, honey, apple pie spice, and coffee in a pot. Cook over medium heat until the honey has melted. Set aside.
  2. In a large bowl, combine the rest of the ingredients. Pour the honey-coffee mixture over the oat mixture and mix gently until the oats are thoroughly coated.
  3. Spread the oats in a thin layer on a baking sheet and place it in the oven. Bake for 20-25 minutes, checking on it and stirring as needed (if it starts to brown).
  4. Take out of the oven. Let cool completely before storing in airtight container
    *NOTE* Anja's recipe calls for adding the coconut at a later stage and the dried fruit after baking. I kind of forgot this step but it still turned out great! But you really have to keep an eye on your granola since the coconut browns pretty quickly!
