Baking Powder: Make Your Own!

I used to work with store-bought baking powder. My baked goods used to suck! Then I switched to making my own baking powder. My baked goods haven't failed since. Making your own baking powder is easy! All you need is two ingredients: baking soda and cream of tartar.

Measure 1 volume of baking soda and 2 volumes of cream of tartar, put them in an airtight container and shake to mix. Done! Mix up small amounts to ensure its freshness. You can also add cornstarch in an equal amount to the baking soda to further enhance its shelf life.

I usually mix 1/2 tbsp baking soda with 1 tbsp cream of tartar and store it in a tightly sealed airtight container. No cornstarch added, yet it keeps for a couple of months without losing its leavening ability! One more benefit of homemade baking powder: it's aluminum-free!
