Blog :: Ramblings of a health nut

I'm feeling a bit like this:

A pile of randomness on a plate. Nuts.
Nothing relaxes me more than preparing food. Well, physical activity does, but I cannot spend all day running around. Although I try! So yesterday afternoon I put on my zesty apron and slaved away in the kitchen.

Two nut butters spawned from my kitchen, among other things. Somehow I decided I would find all the nuts and seeds in my pantry and throw them together. Pecans, walnuts, cashews, peanuts, pistachios, brazil nuts, almonds, sunflower seeds, and sesame seeds... one hell of a mix (all raw and unsalted, equal weight quantities of each)! I toasted the nuts in the oven for about 10 minutes until they started to ooze a bit of oil and turned fragrant. I toasted the sunflower seeds and sesame seeds separately, in a non-stick frying pan on the stove. Threw it all together in my food processor and processed the heck out of them. I added 1 tbsp of pumpkin seed oil, 1 tbsp of hazelnut oil, 1/4 tsp of pink Himalayan salt, and 2 tsp of muscovado sugar. It made one drippy, yummy, fragrant nut butter. I took out about 1/3, and added a few squares of 70% dark chocolate and good quality white chocolate to the remaining 2/3 in the processor, along with 1 tsp of pure vanilla extract. Whizz whizz. A dark and seductive nut butter was born.
