Homemade Vegetarian Sausages

I've had a bag of vital wheat gluten sitting in my pantry for about four months now, so it was about time I did something with it! I bought it with the intention of making my own vegetarian sausages and seitan, but somehow I never got round to it. Now I wonder why, because it's so easy to work with and it takes very little time!

Are you sure they're vegetarian?! They look meaty to me ^^

Homemade Vegetarian Sausages (makes 3)

I based my recipe on this healthy dog recipe. Check it out, because it shows photographs of each step and might be useful to you!


  • 90 g (3/4 c) vital wheat gluten (I used Bob's Red Mill)
  • 30 g of finely grated Parmesan cheese
  • garlic powder to taste (~ 1 tsp)
  • paprika powder to taste (~ 1 tsp)
  • any other seasonings to your liking
  • 1 tbsp of tomato sauce
  • 90 mL (6 tbsp) water


  1. Mix all ingredients together in a bowl and use your hands to knead. If you find the mixture a bit too stiff, add a little more liquid (milk, broth, water).
  2. Divide into 3 equal portions and form each portion into a sausage shape.
  3. Place each sausage on a separate piece of aluminum foil and wrap tightly. Twist the ends of the foil to tie them off.
  4. Bake in an oven for about 30 minutes.

Vegetarian sandwich, sort of BLT style
