Single Serve Black Bean Brownie

Remember that black bean chocolate hummus... I made a new batch a few days ago, and even though I could have eaten it all straight off a spoon, I decided to experiment a little. And that is how the single serve microwave black bean brownie came to be!

It's so easy: mix ~ 2 tbsp of black bean hummus with one egg white, 1-2 tbsp ground flax seed, and 1/8 tsp of baking powder.

Pour batter into a microwave safe dish or container and microwave on high (900 Watt in my case) for 2 minutes.

Let it cool down a bit, it will continue to cook some more as it cools down.

Spread some homemade chocolate almond, walnut & cashew butter on top and dig in!


Some ideas for variation (tried and tested!):
- pre- or post-workout brownie: sub up to 1/2 a scoop (15 g) of chocolate whey protein for the ground flax seed.
- high fiber snack brownie: use one whole egg instead of one egg white, and sub 15 g (= 9 grams of fiber and only 28 calories!!!) of Aman Prana coconut flour for the ground flax seed.
